After upgrading, my doorbell acquired this issue. I was aware of the problem through Reddit anyway.
My personal workaround initially was to auto-reboot each day at 7am (after sunrise), which tripped it back into colour mode.
However, I used the feedback function in Reolink client to just drop a message to Reolink asking for it to be fixed in the next firmware update, and they came back to me within 24 hours with this:

If the camera does not auto switch to night mode, adjust it to -26. If that doesn’t work, adjust it to -45.
If the camera does not auto switch to day mode, adjust it to +26. If that doesn’t work, adjust it to +45.

It turned out that fiddling with the colour switching threshold fixed it. I changed mine to -45 and it trips back to colour by itself again.
There's obviously something wrong, since this was caused by the most recent firmware, and -45 is right down the end of the range, but at least it fixed things for now.
